cobbler's wife...

so i do consider myself a bit of culinary gal, well, i used to be much more of a gal about the kitchen if you will, however, two young ones and some lack of creativity has of late caused me some 'stuckness' in la cuisine...however, once in a while i surprise the lovely beings in this wee home and as FZ says 'you are mustering something up'...he doesn't always like the idea of a 'mustered up meal' however, i will share this little delightful desert with you so that you may enjoy some of this bliss...i am not a big baker normally, but this my fine folks, was so easy that i could not resist and it had the added bonus of bringing back memories of cobblers i used to bake with my mum..so here you have it, do it and add a dollop of vanilla bean ice cream and you will be transported momentarily to heaven my friends....
here is all ya need:
2 pints fresh strawberries hulled and quartered
1 pint blueberries (i used fresh, recommend you do)
1 cup sugar (you shall be dividing)
1 tbsp. cornstarch
3/4 cup flour (i used organic whole wheat and it was lovely)
1 tsp. baking powder
1/2 tsp. salt
1 egg
1/4 cup milk
1/2 tsp. vanilla extract
6 tbsp. butter, melted
1. preheat oven to 375. In a bowl comine all berries, 1/3 cup plus 2 tsp. sugar and cornstarch...let sit 10 min.
2. in another bowl, mix flour, 1/2 cup sugar, baking powder and salt. In a third bowl, stir egg, milk, vanilla and butter. Add dry ingredients, stir well.
3. place in med. size (i used a ceramic oven safe oval dish measuring 10"x7")
divide fruit evenly and top with a spoonfuls evening out on top of fruit of flour mixture. Bake 25-35 minutes until top is golden brown, cool for 5 minutes and serve with vanilla bean ice cream or fresh whipped cream.
you are guaranteed to sport a grin and chuckle for a spell.
